Fresh figs are worth eating or cooking only if they are perfectly ripe, so leave them to soften and develop their flavour in a sun-warmed room if they are at all unripe. serves 8–10

Preheat the oven to 180°C. Grease and flour a 22cm loose-bottomed cake tin.
Put the sliced figs, 40g of the honey and the vanilla seeds in a medium bowl and mix gently.
In a large mixing bowl, beat the butter, remaining honey, the flour, baking powder, ground nuts, eggs and milk with an electric hand mixer. Beat well until thoroughly combined.
Spoon half the cake mixture into the prepared tin and spread the figs gently on top, then spoon over the remaining half of the mixture and smooth using the back of a spoon or a palette knife. Dust with ground cinnamon, if using. Transfer to the oven and bake for 40–45 minutes or until a skewer inserted into the centre comes out clean. Remove from the oven and leave to cool in the tin for 10 minutes before carefully turning out onto a serving plate. Serve warm.
