This indulgent carrot cake is spiked with 58 Gin and topped with cream cheese frosting and walnuts.
This indulgent carrot cake is spiked with 58 Gin and topped with cream cheese frosting and walnuts.
Whisk together the brown sugar, oil and eggs.
In a separate bowl, whisk together the flour, baking soda, baking powder, salt, ginger and cinnamon.
Whisk the flour mixture into the batter.
Grate in the carrots and stir in the gin and walnuts.
Separate the batter between three greased cake tins.
Bake at 180'C for 20 minutes until golden.
Whisk together the butter and cream cheese and then slowly whisk in the icing sugar.
Spread the top of each cake with icing and place on top of the others.
Spread the outside of the cake with icing.
Decorate with the remaining walnuts.
