I omitted the egg and vanilla flavor, substituted the milk with water (I had no milk) and used more water and oil than in the original - to make up for the lack of egg. It got a bit drier and less sponge like and did not rise that much, but it tasted great! I think you could also turn it into crumbles and stir it through a desert.
