    I know how you feel. I have Bipolar disorder and BPD and it was hell going through school. I finished and managed to have a career for two years and ultimately ended up getting disability. If you can work part time that will probably be best for your mental state. There was a chef in my former building who didn't go to culinary school and just worked his way up the ladder, apprenticing and such. It can be done. Best of luck to you!

    Maybe just icing sugar and non-dairy milk? My mom makes our Christmas cookie icing with just the sugar and milk. It will take some work to get the consistency right but when we cool our cookies and ice them it works out.

    I've been a vegetarian for 21 coming on 22 years. I wanted to be a vegan but my nutritionist, who is a vegetarian and used to be a vegan herself, recommended staying a vegetarian and just eating vegan whenever. I'm going to try that and maybe I will end up going vegan full time. Who knows. You just have to be careful getting enough protein and all that jazz. It's certainly doable and don't let other people discourage you. Just read up on it and learn how to get proper nutrition. For me, it will be hard to give up cheese but there are alternatives.     And I've been a vegetarian for 21 coming on 22 years! It's not easy but it has gotten much more doable in recent years. When I first became a vegetarian, you were lucky if you could get a salad and baked potato when you went out. Now there's usually an option. Probably only one but it's still better. Plus more vegetarian/vegan restaurants are popping up. Vegetarian/vegan food done right is actually very yummy. I recommend the Moosewood cookbooks. I can't find the cookbook I love that I got at Barnes & Noble 10+ years ago. It's really good. Pinterest has some good recipes, too. Happy cooking! Cooking

    Here's a favorite I've been making lately. It's vegan and yummy:
    Sweet Potato Peanut Stew
    2 T canola oil
    2 red sweet peppers chopped
    1 large onion chopped
    6 cloves garlic minced
    2 T grated ginger
    1 t ground allspice
    2 lbs. sweet potatoes, peeled and chopped
    4 C vegetable broth
    1 6oz can tomato paste
    1 14 oz can coconut milk
    1 C peanut butter
    Pinch cayenne pepper

    HEAT canola oil in 4 to 6 qt dutch oven or medium heat

    ADD peppers, onion, garlic, ginger, allspice, and a pinch of cayenne pepper Cook 5 minutes on medium heat

    ADD potatoes, broth and tomato paste. Bring to a boil. Simmer covered 40 minutes

    WHISK together coconut milk and peanut butter until smooth. Stir in stew. Simmer 5 minutes Cooking

    I need help with breakfast. I'm a vegetarian who doesn't eat eggs. I like the idea of overnight oats, I just haven't tried them yet. I also want a savory option but I've also soured on tofu Sad ...Damn my finicky stomach!

    There's Daiya cheese and tofutti cream cheese, if you don't feel like making those things. They're just OK. The nutritional yeast is a good suggestion. Peanut sauces are good on spaghetti squash or spiralized vegetables. Tempeh is yummy. You can be lazy and just throw bbq sauce on that and it's good. You can do other stuff with it, too. Put it in Arizona Skillet (google it) for extra protein. You can make cashew parmesan "cheese". Happy Eating! Cooking
