Heat up the pan and add 1 tablespoon butter, then add onions, leeks and pears cook until onions become golden. Add the brown sugar, the red wine and balsamic. Let the onions guzzle it up, and get a sticky glaze. Add salt and pepper. Don’t overdo the salt though, as you’ll be adding salty cheese later. once done, leave it for cool.
On a floured surface, roll the pastry out. Cut into 25cm x 18cm, then put on the lined tray. Prick all over with a folk and put in the fridge for 10 minutes. Then bake fo 10 minutes.
Lay on top of the cheese, onions, leeks, and pears. Add walnuts for optional. Tuck the edges in. Gently press down. Egg wash all the edges.
Bake for 40 mins or until it becomes golden. Sprinkle rosemary or rockets etc.
