Street vendors aren't out during the winter, but you can make elotes at home in just a few minutes using this simple recipe. Crema can be substituted for sour cream, cotija can be substituted for parmesan and cayenne can be substituted for paprika.

You will need

1 lbs Frozen Corn , defrosted ½ tablespoon Canola Oil Crema Sour Cream 2 tbsp Cotija Cheese Sprinkle of Cayenne Pepper Cilantro Lime

Instructions

1. Heat oil in a large pan.

2. Sauté corn in oil until it starts to make a crackling noise, just a few minutes.

3. Turn off heat. .

4. Mix in crema, stir and heat until thoroughly mixed and hot.

5. Serve with a sprinkle of cayenne and cilantro and a squirt of lime juice.
